Dan’s biography —
Once retired from the U.S. Department of Agriculture, Food Safety and Inspection Service (FSIS), with 40-years of public service, Dan taught at the University of Arizona (UAZ). For three years, Professor of Practice Engeljohn taught eight courses addressing food (law, risk analysis, and safety) and animal production (dairy production, processing, and calving management). With the onset of COVID-19 and online courses, Dan decided to more fully retire and teach classes within the retirement communities surrounding Tucson.
